Abstract

The shelf life of a product really needs to be considered before the product is marketed. The aim of this research was to determine the shelf life of microencapsulated – extractofmicroalgae Nannochloropsis sp. The shelf life prediction using accelerated shelf life testing (ASLT) method, calculated using Labuza model with critical moisture content approach.Analysis of the water sorpsionisothermic characteristics of the sample in the Henderson approach model. The shelf life of microencapsulated – extract of microalgae Nannochloropsissp at 28 oC at 75% RH using low density polyethylene (LDPE) plastic packaging with 0.03 mm thickness is 0.93 months and 0.1 mm aluminum foil packaging is 8.14 months.
